Ingredients
For the Dough
- 2 cup All-Purpose Flour
- 1.5 tsp Salt
- 1 tsp Oil
- 0.5 cup Water hot, or as needed
For the Filling
- 2 large Potatoes boiled and mashed
- 1 cup Spring Onions chopped
- 1 medium Onion chopped
- 1 tsp Chili Paste green
- 1 tsp Chili Sauce red
- 1 tsp Soy Sauce
- 1 tsp Pepper black
- 1 tsp Chili Powder red
For Frying
- Oil for frying
Instructions
- In a large bowl, combine the all-purpose flour, salt, and oil. Gradually add hot water while mixing to form a soft, pliable dough. Kneading helps develop gluten, which gives the samosas a satisfying chew. Cover the dough and let it rest for 15 minutes. This allows the gluten to relax, making the dough easier to roll.
- Boil the potatoes until tender. Drain and mash them thoroughly.
- Heat 1 teaspoon of oil in a pan over medium heat. Add the chopped onions and sauté for 2-3 minutes, until softened and translucent.
- Add the chopped spring onions, green chili paste, salt, black pepper, red chili powder, red chili sauce, and soy sauce to the pan. Sauté for a few minutes until fragrant.
- Add the mashed potatoes to the pan and mix well with the other ingredients. Ensure the mixture is heated through.
- Divide the dough into small portions. Roll each portion into a thin circle, similar to a roti or tortilla.
- Spread a portion of the potato mixture evenly over one half of the rolled-out dough. Fold the dough over to create a half-moon shape, sealing the edges tightly. Crimp the edges with a fork or your fingers to prevent the filling from leaking out during frying. Cut each filled dough circle into two or three smaller samosas.
- Heat oil in a deep fryer or large pot over medium-high heat. Carefully place the samosas in the hot oil and fry until golden brown and crispy, turning occasionally to ensure even cooking.
- For extra crispy samosas, you can optionally dip each samosa in a thin flour and water batter before frying.
- Remove the fried samosas from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
Recipe Notes
Good To Know
- For extra crunch and authentic flavor, lightly toss the filling with a handful of finely shredded cabbage or carrots before stuffing the samosas. This also adds vibrant color and freshness.
- Seal the samosa edges with a slurry made from flour and water to prevent the filling from leaking during frying and to ensure a crisp, golden crust.
- For a baked version, brush the assembled samosas with a mixture of oil and a little soy sauce, then bake at 200°C (400°F) until golden and crispy, turning once halfway through for even browning.
- Serve with a dipping sauce made by mixing equal parts tomato ketchup and red chili sauce, finished with a dash of soy sauce and chopped spring onions for a tangy, spicy accompaniment.
Expert Tips
- Don't overfill the samosas, as this can cause them to burst during frying or baking.
- For perfectly shaped samosas, use a round cookie cutter or a small bowl to cut out even circles from the dough.
- Experiment with different fillings! Try using spiced lentils, ground meat, or even sweet potato for a unique twist.
Storage Instructions
- Store leftover samosas in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or air fryer for optimal crispness.
