- 300 gm All-Purpose Flour maida
- 1/2 tsp Carom Seeds ajwain
- 1 1/2 tsp Salt or as per taste
- 2 tbsp Ghee
- 1/2 cup Water or as needed
For the Filling
- 4 Potatoes and mashed, boiled, peeled
- 2 tbsp Oil
- 1/4 tsp Mustard Seeds rai
- 3 Chilies finely chopped, green
- 1 sprig Curry Leaves
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Salt or as per taste
Instructions
- In a mixing bowl, combine the all-purpose flour, carom seeds, salt, and oil or ghee. Gradually add water, mixing until a stiff dough forms. Kneading helps develop gluten, resulting in a crispier samosa. Cover the dough and let it rest for 30 minutes. This allows the gluten to relax, making the dough easier to work with.
- While the dough rests, prepare the filling. Heat oil in a pan. Add mustard seeds and let them splutter. This releases their distinct aroma. Add chopped green chilies and curry leaves, sautéing briefly. Stir in turmeric powder and salt.
