  • Mash the boiled potatoes thoroughly in a large bowl until smooth and lump-free.
  • In a small pan, sauté the minced garlic and chili flakes in 1 tsp of oil for 30 seconds to release their aroma, then add this to the mashed potatoes.
  • Add the rice flour, cornstarch, salt, and dried oregano to the potato mixture.
  • Knead the mixture gently to form a soft, non-sticky dough.
  • Lightly grease your palms and roll the dough into small, uniform cylinders (about 1 inch long).
  • Roll each potato cylinder in breadcrumbs, pressing gently so the crumbs coat the surface evenly.
  • Heat oil in a heavy-bottomed wok on medium-high heat.
  • Carefully slide the shots into the oil and deep fry for 3–4 minutes, turning frequently until they are a deep golden brown.
  • Remove with a slotted spoon and drain on paper towels to keep them crispy.

Recipe Notes

  • For the best results, chill the shaped shots in the freezer for 15 minutes before frying to ensure they don't break and stay extra crunchy!
