Ingredients
Potato Mixture
- 4 Potatoes and grated, boiled, peeled
- 2 Tbsp Breadcrumb
- 1 Tbsp Corn Flour
- 1 1/2 tsp Salt or to taste
- 1 tsp Garlic fried
- 1 tsp Chili Flakes
- 1 Chili finely chopped, green
- 1 Tbsp Ching'S Schezwan Chutney
For Coating and Frying
- 1 Tbsp Corn Flour for dusting
- Oil for frying
Instructions
- In a large bowl, combine the grated potatoes, bread crumbs, 1 tablespoon of cornstarch, salt, fried garlic, chili flakes, chopped green chili, and Schezwan chutney.
- Mix the ingredients thoroughly until a dough-like consistency is formed. Lightly oil your hands if the mixture is too sticky.
- On a lightly oiled surface, roll out the potato dough into a flat rectangle about 1/4 inch thick.
- Cut the dough into small bite-sized pieces, squares or rectangles.
- Spread the remaining 1 tablespoon of cornstarch on a plate. Gently dust each potato bite with the cornstarch, ensuring all sides are lightly coated. This helps create extra crispiness.
- Heat the oil in a large pan over medium-high heat. Once hot, carefully add the potato bites to the pan, ensuring not to overcrowd it. Fry in batches if necessary.
- Fry the potato bites for 3-4 minutes on each side, or until they turn golden brown and crispy. Turning them ensures even cooking and browning.
- Remove the crispy potato bites from the pan and place them on a plate lined with paper towels to absorb any excess oil.
- Serve the chili garlic potato bites immediately while they are hot and crispy. Enjoy them with your favorite dipping sauce or chutney.
Recipe Notes
Good To Know
- You can adjust the quantity of chili flakes and garlic to your preference.
- Pre-fried garlic is often available in stores. If you can't find it, chop fresh garlic and fry it in oil for a minute.
- You can prepare fried garlic ahead of time and store it in the freezer for a day or two.
- For extra crunch, double-coat the potato bites: Dip them in corn flour slurry and breadcrumbs, let them rest, and then repeat the coating process.
- For a milder version, reduce the green chilies and chili flakes, and add grated cheese to the potato mixture for creaminess.
- To make ahead, shape and bread the bites, then freeze in a single layer. Cook from frozen, adding 2-3 minutes to the cooking time.
- For air frying or baking, lightly spray the coated bites with oil and cook at 200°C (400°F) until golden and crisp, turning halfway through.
Expert Tips
- Experiment with different seasonings in your breadcrumb mixture, such as paprika, onion powder, or Italian herbs.
- Serve these potato bites with a variety of dipping sauces, like ketchup, ranch dressing, or a spicy mayonnaise.
- For a fun variation, try using different types of potatoes, such as sweet potatoes or Yukon Golds.
Storage Instructions
- Store leftover potato bites in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results.
