Instructions

Prepare the Mint Chutney

  • Combine mint leaves, onion, raw mango, green chilies, salt, and water in a blender. Blend until smooth.

Marinate the Paneer

  • In a bowl, mix 2 tablespoons of mint chutney, chili flakes, and salt. Add the paneer cubes and toss to coat. Let it marinate for at least 10 minutes.

Make the Batter

  • In another bowl, whisk together all-purpose flour, cornflour, 1 tablespoon of mint chutney, and 4 tablespoons of water until you have a smooth, pourable batter.

Prepare the Coating

  • Crush the cornflakes. In a plate, combine crushed cornflakes and breadcrumbs.

Fry the Paneer

  • Heat vegetable oil in a pan over medium-high heat. Dip each paneer cube in the batter, then coat thoroughly in the cornflake and breadcrumb mixture. Carefully place the coated paneer in the hot oil and fry until golden brown and crispy on all sides.

Serve

  • Remove the crispy paneer from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.

Recipe Notes

Expert Tips for Extra Crispy Paneer:

  • For extra crispy paneer, ensure your oil is hot enough before adding the paneer cubes. The oil should shimmer slightly.
  • Don't overcrowd the pan when frying. Fry in batches to maintain the oil temperature and ensure even cooking.
  • Allow the marinated paneer to rest for at least 10 minutes to allow the flavors to meld and the paneer to absorb the moisture.
  • If you prefer a spicier kick, add more chili flakes or a pinch of cayenne pepper to the marinade.
