Ingredients
For the Chicken Lollipops
- 6 Chicken Wings full-size, separated into drumettes and wingettes
For the Marinade
- 2 tsp Chili Powder
- 2 tbsp Ginger-Garlic Paste
- 1 tsp Salt to taste
- 1 tsp Pepper black, freshly ground, is best
- 2 tbsp Soy Sauce
For the Batter
- 0.5 cup All-Purpose Flour approximately 60g
- 0.5 cup Corn Flour approximately 60g
- 1 tbsp Chili Powder red
- 1 Egg
- 0.25 cup Water approximately 60ml
- 2 cup Vegetable Oil for frying (approximately 500ml)
For Serving
- Schezwan Sauce or your favorite dipping sauce, to taste
Instructions
Prepare the Chicken Wings
- Separate each chicken wing into three parts at the joints. Discard the wing tips or save them for stock. For the drumette, cut around the thin end to separate the meat from the bone. Push the meat down to create the lollipop shape. For the wingette, separate the two bones and cut around both ends to separate the meat from the bone. Remove the thinner bone and push the meat down towards one end.
Marinate the Chicken
- In a bowl, combine all marinade ingredients. Add the prepared chicken lollipops, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably longer for maximum flavor.
Make the Batter
- In a separate bowl, whisk together all batter ingredients until smooth and lump-free. Adjust the consistency with a little more water if needed.
Fry the Chicken Lollipops
- Heat vegetable oil in a deep fryer or large pot to 170°C (340°F). Carefully dip each chicken lollipop into the batter, ensuring it’s fully coated. Fry in batches for 5-7 minutes, or until the batter is golden brown and the chicken is cooked through. Use a thermometer to ensure the internal temperature reaches 74°C (165°F).
Serve
- Remove the lollipops from the oil and place them on a wire rack to drain excess oil. Serve immediately with your favorite dipping sauce, such as schezwan sauce.
