Marinate the Chicken

  • Marinate the chicken lollipops with ginger-garlic paste, salt, hung curd (or yogurt), 2 tbsp green chili paste, and 2 tbsp lime juice for at least 1 hour, or preferably longer in the refrigerator.

Prepare the Batter

  • In a bowl, whisk together the egg, all-purpose flour, corn flour, salt, pepper, and water until a smooth, thick batter forms. Adjust water as needed to reach desired consistency. Dip each marinated lollipop into the batter, ensuring it’s fully coated.

Deep Fry the Lollipops

  • Heat about 2 inches of oil in a deep pot or wok to 350°F (175°C). Carefully fry the battered lollipops in batches, ensuring not to overcrowd the pot, until golden brown and cooked through. Remove and drain on paper towels.

Make the Sauce

  • Heat 4 tbsp oil in a wok or large pan over medium heat. Add the minced garlic and ginger and sauté for about 2 minutes until fragrant. Add the chopped onion and sauté for another 2 minutes until softened. Stir in the chopped coriander, garlic scapes, and green chili paste. Cook for 1 minute, then add a pinch of sugar and a splash of water. Simmer for 2 minutes.

Combine and Serve

  • Add the fried chicken lollipops to the sauce and toss gently to coat. Add 1 tbsp of lime juice. Garnish with sliced green bell pepper and serve immediately.
