For the Spinach Filling

  • 10 oz Spinach about 2 bunches, fresh, washed and roughly chopped
  • 1 cup Parmesan Cheese grated
  • 3 Onions finely chopped, green
  • 4 Eggs lightly beaten
  • 1.5 tsp Salt or to taste
  • 1/2 tsp Pepper black, freshly ground, or to taste

  • 1 tbsp Olive Oil for greasing the baking sheet

Instructions
 

Prepare the Spinach

  • Preheat oven to 350°F (175°C). Wash and thoroughly chop the spinach. Sauté spinach until wilted, then drain excess liquid.

Combine Ingredients

  • In a large bowl, combine the wilted spinach, Parmesan cheese, green onions, beaten eggs, salt, and pepper. Mix well to combine.

Form the Cheese Balls

  • Roll the spinach mixture into 1-inch balls. Set aside.
