Ingredients
For the Dough
- 3 cup Whole Wheat Flour whole
- 2 tsp Semolina suji
- 1 1/2 tsp Salt or to taste
- 1/4 tsp Carom Seeds ajwain
- 5 1/2 tsp Oil
For the Filling
- 1 cup Cheese grated, such as mozzarella or cheddar
- 1/4 cup Coriander chopped, fresh
- 1/2 tsp Oregano dried
- 1/4 tsp Chili Flakes red
- 1/2 tsp Chaat Masala
- 1/2 tsp Salt or to taste
Instructions
- In a large bowl, combine the whole wheat flour, semolina, salt, and carom seeds. Rub the oil into the flour mixture with your fingertips until it resembles coarse crumbs. This helps create flaky layers in the samosa dough.
- Gradually add water, a little at a time, mixing until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic. Cover the dough and let it rest for 15 minutes. This allows the gluten to relax, making the dough easier to work with.
- In a separate bowl, combine the grated cheese, chopped cilantro, dried oregano, red chili flakes, chaat masala, chopped serrano chili, and salt. Mix well to ensure the cheese is evenly coated with the spices.
- Divide the dough into small, equal-sized portions. Roll each portion into a thin circle. Cut each circle in half to form two semicircles.
- Shape each semicircle into a cone. Fill each cone with a spoonful of the cheese filling, ensuring not to overfill. Seal the edges tightly to prevent the filling from leaking out during frying.
- Heat oil in a deep fryer or large pot over medium heat. Carefully place the filled samosas into the hot oil, ensuring not to overcrowd the pot. Fry the samosas until they turn golden brown and crispy, about 6-8 minutes, turning occasionally for even cooking.
- Remove the samosas from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil. Serve the hot, crispy samosas immediately with your favorite chutneys or sauces.
Recipe Notes
Good To Know
- For health benefits, wheat flour is used in the dough, but you can substitute all-purpose flour or a half-and-half mixture.
- Processed Amul cheese is used for the stuffing, but mozzarella, a mixture of cheeses, or even cottage cheese (paneer) can be used.
- The provided stuffing is simple, quick, and handy, but you can customize it to your preference.
- For parties, consider making the samosas spicier.
- For an extra flavor boost, mix a pinch of chaat masala or finely chopped green chilies into the cheese filling.
- For a healthier option, bake the samosas at 200°C (390°F) for 18-20 minutes, flipping halfway through.
- To maintain crispiness, place fried samosas on a wire rack to prevent them from becoming soggy.
- Add finely chopped vegetables like bell peppers or sweet corn to the cheese filling for added texture, color, and nutrition.
Expert Tips
- For perfect samosa shapes, use a sharp cutter or knife to ensure clean edges, which helps prevent leakage during frying or baking.
- Seal the samosa edges thoroughly with a mixture of flour and water to create a strong bond and prevent the filling from escaping.
- Fry the samosas in small batches to maintain a consistent oil temperature, resulting in evenly cooked and crispy samosas.
Storage Instructions
- Store leftover samosas in an airtight container at room temperature for up to 2 days. For longer storage, freeze them for up to 2 months. Reheat in a preheated oven or air fryer for optimal crispiness.
