  • Boil the corn kernels until tender. Drain well and then blend into a smooth paste.
  • Heat oil in a pan. Add asafoetida, then red chili powder and turmeric powder. Sauté briefly.
  • Add the corn paste and sauté for 5-10 minutes, stirring frequently.
  • Stir in the milk and lemon juice. Bring to a simmer and cook until thickened, about 2 minutes.
  • Season with salt to taste. Set aside to cool.

Make the Dough

  • In a large bowl, combine flour and salt.
  • Add oil or ghee and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.
  • Gradually add water, mixing until a firm, smooth dough forms. Knead for 5-7 minutes.
  • Cover the dough with a damp cloth and let it rest for 10 minutes.

Assemble and Fry the Samosas

  • Divide the dough into 6 equal pieces. Roll each piece into a thin circle.
  • Cut each circle into a semi-circle. Make a small cut along the straight edge, brush with water, and seal to form a cone.
  • Fill each cone with some cheese, corn filling and then more cheese. Seal the top tightly.
  • Heat vegetable oil in a deep pan or kadai for deep frying.
  • Fry the samosas in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve hot with your favorite chutney or ketchup.
