Ingredients
- 1 tsp Lemon Juice
- 1/2 cup Milk
- 1/2 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1/8 tsp Asafoetida hing
- 100 gm All-Purpose Flour maida
- 2 tsp Oil
- 250 gm Corn sweet
- 3 Cheese sliced or shredded
- 1.5 tsp Salt or as per taste
Instructions
Prepare the Corn Filling
- Boil the corn kernels until tender. Drain well and then blend into a smooth paste.
- Heat oil in a pan. Add asafoetida, then red chili powder and turmeric powder. Sauté briefly.
- Add the corn paste and sauté for 5-10 minutes, stirring frequently.
- Stir in the milk and lemon juice. Bring to a simmer and cook until thickened, about 2 minutes.
- Season with salt to taste. Set aside to cool.
Make the Dough
- In a large bowl, combine flour and salt.
- Add oil or ghee and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.
- Gradually add water, mixing until a firm, smooth dough forms. Knead for 5-7 minutes.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
Assemble and Fry the Samosas
- Divide the dough into 6 equal pieces. Roll each piece into a thin circle.
- Cut each circle into a semi-circle. Make a small cut along the straight edge, brush with water, and seal to form a cone.
- Fill each cone with some cheese, corn filling and then more cheese. Seal the top tightly.
- Heat vegetable oil in a deep pan or kadai for deep frying.
- Fry the samosas in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with your favorite chutney or ketchup.
