Ingredients
For the Dough
- 1/2 cup Whole Wheat Flour atta, whole
- 1/2 cup All-Purpose Flour maida
- 1 tsp Baking Powder
- 1 tsp Salt
- 2 tsp Oil
- 1/2 cup Milk
For the Kidney Bean Filling
- 1 cup Kidney Beans rajma, soaked overnight
- 2 cup Water
- 1 Tbsp Chili Sauce green
- 1 Tbsp Tomato Sauce
- 1/2 tsp Salt
- 1/4 cup Water
For the Toppings

- Oil for deep frying
Instructions
- Soak 1 cup of kidney beans overnight. This helps them cook evenly and reduces cooking time.
- Place the soaked kidney beans in a pressure cooker. Add 2 cups of water. Cook over medium heat for 3-4 whistles.
- Once the pressure has released naturally, strain the beans using a sieve. Mash the beans in a mixing bowl.
- In the bowl with the mashed beans, add 1 tablespoon of green chili sauce, 1 tablespoon of tomato sauce, ½ teaspoon of salt, and ¼ cup of water. Mix well and set aside.
- While the beans are cooking, prepare the dough. In a mixing bowl, combine ½ cup whole wheat flour, ½ cup all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon salt.
- Add 2 teaspoons of oil to the dry ingredients and mix well. Gradually add ½ cup of milk, mixing until a soft dough forms.
- Grease the dough with ½ teaspoon of oil. Cover and let it rest for 30 minutes. This allows the gluten to relax, resulting in a more tender chalupa.
- Knead the dough briefly. Divide it into equal portions. Roll each portion into a 4-inch circle.
- Lightly oil your work surface. Roll out one portion of dough into a 4-inch circle.
- Prick the dough with a fork. This prevents the chalupas from puffing up excessively while frying.
- Heat oil in a deep fryer or large pot. Carefully place a chalupa in the hot oil. Gently fold it in half to create a shell shape. Fry until golden brown and crispy.
- Repeat with the remaining dough portions.
- Fill each fried chalupa shell with the seasoned kidney bean mixture.
- Top with chopped onions, tomatoes, green bell peppers, and lettuce. Add a dollop of sour cream and finish with grated cheese.
- Serve immediately and enjoy!
