Ingredients

- 250 gm All-Purpose Flour maida
- 1/2 tsp Baking Soda
- 1.5 tsp Salt
- 1/2 tsp Ajwain Seeds
- 1 tbsp Refined Oil
- 100 gm Spinach boiled and pureed
For the Filling
- 50 gm Potato boiled and diced
- 50 gm Peas green
- 1 tbsp Refined Oil
- 1/2 tsp Sesame Seeds
- 1/2 - 1 tsp Garam Masala to taste
- 1/2 - 1 tsp Chaat Masala to taste
- 1/2 - 1 tsp Chili Powder to taste
- 1/4 cup Coriander Leaves chopped, fresh
Instructions
- In a large bowl, combine the all-purpose flour, baking soda, salt, and ajwain seeds. Mix well.
- Create a well in the center of the dry ingredients and add the refined oil. Mix until the oil is incorporated.
- Gradually add the spinach puree and knead until a firm dough forms. Kneading develops gluten, which gives the samosas their structure.
- Wrap the dough in plastic wrap and refrigerate for 15-20 minutes to allow it to rest. This will make it easier to roll.
