Ingredients
For the Yogurt Cheese
- 500 gm Yogurt full-fat plain yogurt, preferably greek yogurt for a creamier texture. fat-free yogurt can be used but may result in a less creamy spread.
- 2 clove Garlic finely minced
- 1 tbsp Basil freshly chopped
- 1 tbsp Oregano chopped oregano, dried oregano flakes or 2 tbsp fresh
- 1 tbsp Thyme freshly chopped
- 1 tbsp Olive Oil extra virgin olive oil
- 1/2 tsp Salt or to taste
- 1/4 tsp Pepper black, freshly ground, or to taste
Optional Garnishing
- 1 tbsp Herbs parsley, chives, chopped, fresh, or dill
- 1 Pinch Of Pepper Flakes for extra heat (optional), red
Instructions
Prepare the Yogurt
- Spoon 500g of yogurt into a piece of cheesecloth or a clean kitchen towel. Tie the cloth securely to form a bundle.
- Hang the bundle over a bowl or colander in the sink to drain for 4-5 hours, or until the whey is mostly separated.
- Remove the yogurt from the cloth and transfer it to a medium-sized bowl.
Combine Ingredients
- Add the minced garlic, chopped basil, oregano, thyme, olive oil, salt, and pepper to the drained yogurt.
- Stir gently but thoroughly until all ingredients are well combined.
Chill and Serve
- Cover the bowl and refrigerate for at least 1-2 hours to allow the flavors to meld and the cheese to chill.
- Garnish with additional fresh herbs (such as parsley, chives, or dill) and a pinch of red pepper flakes before serving, if desired.
