For the Rabdi Base

  • 1/4 cup Fox Nut fox nuts; roast until golden
  • 2 tbsp Ghee clarified butter; adds richness and flavor
  • 1 tbsp Almonds toasted for enhanced flavor, sliced
  • 1 tbsp Rose Petals for garnish

Prepare the Makhana

  • Roast 2 tablespoons of desi ghee in a pan over medium heat. Add the makhana and roast until golden brown, stirring frequently to prevent burning. Remove from heat and set aside.

Make the Rabdi Base

  • In a heavy-bottomed saucepan, heat the whole milk over medium heat. Bring to a gentle simmer, then reduce heat to low and let it simmer gently, stirring occasionally to prevent sticking and scorching. This process will reduce the milk and thicken it into rabri.

Combine and Finish

  • Stir in the milk powder, sugar, and cardamom powder into the simmering milk. Continue to cook and stir until the mixture thickens and reaches your desired consistency. The rabdi should coat the back of a spoon. Stir in the roasted makhana.

Garnish and Serve

  • Remove from heat and let the rabri cool slightly. Garnish with toasted almonds and rose petals. Serve chilled for the best flavor and texture.
