  • 10 oz Spinach fresh, roughly chopped (also known as palak)
  • 1/2 medium Onion finely chopped

Sauté Aromatics

  • Heat butter (or oil) in a pan over medium heat. Add the finely chopped onion and sauté until translucent, about 3-5 minutes.

Wilt Spinach

  • Add the roughly chopped spinach to the pan and sauté for another 1-2 minutes, until slightly wilted.

Blend the Soup

  • Allow the mixture to cool slightly. Then, blend the onion-spinach mixture with 2 cups of water until completely smooth. Strain the puree through a fine-mesh sieve to remove any tough fibers.

Thicken the Soup

  • In a separate bowl, whisk together the cornstarch and milk until smooth to prevent lumps. Pour the spinach puree into a saucepan and bring to a gentle simmer. Gradually whisk in the cornstarch-milk mixture, stirring continuously until the soup thickens.

Season and Finish

  • Reduce heat to low and stir in the salt, black pepper, and heavy cream. Simmer for 1 minute, or until heated through. Do not boil.

Serve

  • Remove from heat and serve the palak soup hot. Garnish with an extra dollop of cream, if desired.
