Ingredients
Aromatics & Spices
- 1 medium Onion finely chopped
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1/2 tsp Cumin Seeds jeera
- 1 pinch Pepper or black pepper, white
- 1 Cardamom Pod black
- 1 Bay Leaf tej patta
- 1 stick Cinnamon
Vegetables & Greens
- 2 cup Baby Spinach
Liquids & Fats
- 1 tbsp Butter or vegetable oil
- 4 cup Vegetable Stock or water
Seasoning & Finishing
- 1.5 tsp Salt or to taste
- 1 tbsp Heavy Cream optional
Instructions
Sauté Aromatics
- Melt butter (or oil) in a pan. Add black cardamom, cinnamon, and bay leaf. Sauté until fragrant.
Add Vegetables and Spices
- Add ginger and garlic pastes, followed by the chopped onion. Sauté until translucent. Stir in the spinach and salt. Sauté for 1 minute.
Simmer and Blend
- Add cumin seeds and vegetable stock (or water). Bring to a simmer and cook for 8-10 minutes. Remove whole spices and blend the soup until smooth using an immersion blender or regular blender.
Finish and Serve
- Return the blended soup to the pan. Adjust consistency with more stock if needed. Stir in cream (if using). Season with salt and pepper to taste. Serve hot.
