  • 1.5 tsp Salt or to taste
  • 1 tsp Pepper black, freshly ground, or to taste

  • 1/4 cup Cream for garnish, heavy cream or coconut cream
  • 4 cup Water
  • 1 tbsp Ghee for sautéing

Instructions
 

Preparation

  • Wash the spinach thoroughly and set aside.
  • Finely chop the onion and carrot.

Sautéing Vegetables

  • Heat ghee or oil in a pot over medium heat. Add the chopped onion and carrot and sauté until softened, about 5 minutes.

Blanching Spinach

  • Add 4 cups of water to the pot and bring to a boil. Add the spinach and cook until wilted but still bright green, about 2-3 minutes.

Pureeing the Soup

  • Immediately transfer the spinach mixture to a bowl of ice water to stop the cooking process. Let it sit for 5 minutes.
  • Drain the spinach mixture well. Puree the mixture using an immersion blender or in a regular blender until completely smooth. Strain the puree through a fine-mesh sieve to remove any fibers.

Simmering and Seasoning

  • Return the pureed spinach to the pot. Add salt and pepper to taste. Simmer for 5 minutes, stirring occasionally, to allow the flavors to meld.
