Ingredients
 

Aromatics & Spices

Vegetables

  • 1 Onion finely chopped, medium
  • 3 clove Garlic finely chopped
  • 5 Tomatoes medium, roughly chopped
  • 1/2 cup Coriander dhania, roughly chopped with stems, tightly packed

Liquid & Seasoning

  • 2 cup Water adjust for desired consistency
  • 1.5 tsp Salt or to taste

Instructions
 

Sauté Aromatics

  • Heat butter in a pressure cooker. Add cumin seeds, bay leaf, coriander seeds, black peppercorns, and broken red chilies. Stir for a few seconds until fragrant.

Cook Vegetables

  • Add the finely chopped onion and cook until translucent. Add the minced garlic and cook until the raw aroma disappears.

Combine Ingredients

  • Add the chopped tomatoes, coriander leaves, and salt. Mix well to combine.

Pressure Cook

  • Add 2 cups of water, close the pressure cooker lid, and cook for 3 whistles.

Natural Pressure Release

  • Switch off the heat and allow the pressure to release naturally.

Blend & Strain

  • Once cooled, carefully open the cooker. Remove the bay leaf. Blend the mixture into a smooth puree using an immersion blender or regular blender. Pass the soup through a fine-mesh sieve to remove any solids.

Adjust Consistency & Reheat

  • Discard the solids. Reheat the pureed soup in a saucepan, adding more water if needed to reach your desired consistency. The soup should be slightly thin.

Garnish & Serve

  • Garnish with fresh coriander leaves. Serve hot with croutons or crusty bread.
