Ingredients

- 1 tsp Cumin Seeds
- 1 Bay Leaf tej patta
- 1/2 tbsp Coriander Seeds
- 3/4 tsp Peppercorns black
- 2 Chili Peppers broken, medium hot, red

Instructions
Sauté Aromatics
- Heat butter in a pressure cooker. Add cumin seeds, bay leaf, coriander seeds, black peppercorns, and broken red chilies. Stir for a few seconds until fragrant.
Cook Vegetables
- Add the finely chopped onion and cook until translucent. Add the minced garlic and cook until the raw aroma disappears.
Combine Ingredients
- Add the chopped tomatoes, coriander leaves, and salt. Mix well to combine.
Pressure Cook
- Add 2 cups of water, close the pressure cooker lid, and cook for 3 whistles.
Natural Pressure Release
- Switch off the heat and allow the pressure to release naturally.
Blend & Strain
- Once cooled, carefully open the cooker. Remove the bay leaf. Blend the mixture into a smooth puree using an immersion blender or regular blender. Pass the soup through a fine-mesh sieve to remove any solids.
Adjust Consistency & Reheat
- Discard the solids. Reheat the pureed soup in a saucepan, adding more water if needed to reach your desired consistency. The soup should be slightly thin.
Garnish & Serve
- Garnish with fresh coriander leaves. Serve hot with croutons or crusty bread.
