Ingredients
Mango Mixture
- 1 cup Mango Pulp fresh
- 2 Tbsp Sugar
Yogurt Mixture
- 1 cup Yogurt thick
- 2 Tbsp Sugar
- 1/2 tsp Vanilla Extract
Instructions
- In a bowl, combine the fresh mango pulp and 2 tablespoons of sugar. Mix well and set aside.
- In a separate bowl, combine the thick yogurt, remaining 2 tablespoons of sugar, and vanilla extract. Mix thoroughly until the sugar is dissolved and the mixture is smooth.
- Begin layering the popsicles. Add 2 tablespoons of the mango mixture to each popsicle mold. Then, add 2 tablespoons of the yogurt mixture. This layering creates a beautiful swirl effect.
- Top each mold with a final layer of 2 tablespoons of mango mixture.
- Insert popsicle sticks into the center of each mold. Freeze for 4-5 hours, or until solid.
Recipe Notes
Good To Know
- For extra texture and flavor, swirl in small chunks of ripe mango or a handful of chopped pistachios before pouring the mixture into molds.
- If you prefer a vegan version, substitute thick curd with coconut yogurt and use agave syrup or maple syrup instead of sugar.
- To achieve a layered look, pour half the mango mixture into molds, freeze for 30-40 minutes, then add a plain sweetened yogurt layer and freeze again before serving.
- For enhanced aroma and an Indian twist, add a pinch of ground cardamom or a few strands of saffron to the mango-yogurt blend.
Expert Tips
- Use perfectly ripe, sweet mangoes for the best flavor. If your mangoes are slightly tart, add a touch more sweetener to balance the taste.
- For a smoother texture, blend the mango mixture thoroughly before adding any chunks of fruit or nuts.
- Don't overfill the molds. Leave a little space at the top to allow for expansion during freezing.
Storage Instructions
- Store leftover mango lassi popsicles in an airtight container in the freezer for up to 2 months.
