For the Kheer

  • 1 ltr Milk whole milk recommended for creaminess
  • 1/4 cup Sugar adjust to your sweetness preference
  • 1/2 tsp Cardamom Powder freshly ground cardamom is best
  • 1/4 cup Raisins
  • 1/4 cup Almonds slivered or crushed

Instructions
 

Prepare the Makhana

  • Heat ghee in a pan over medium-low heat. Add the lotus seeds and stir-fry until lightly browned and crispy, about 5-7 minutes. Remove from heat and let cool completely.
  • Once cool, coarsely grind the roasted lotus seeds using a mortar and pestle or a food processor.

Make the Kheer

  • In a heavy-bottomed saucepan, bring the milk to a boil over medium heat.
  • Reduce heat to low and simmer gently, stirring occasionally, until the milk thickens slightly, about 15-20 minutes.
  • Add the ground lotus seeds and stir well to combine. Continue to simmer and stir until the kheer thickens further, another 10-15 minutes.
  • Stir in the sugar, cardamom powder, raisins, and almonds. Mix well to combine.
  • Simmer for another 2-3 minutes, ensuring the kheer reaches your desired consistency. Remove from heat.

Serve and Enjoy

  • Let the kheer cool slightly before serving. Garnish with extra chopped almonds or raisins (optional) and serve warm or chilled.
