  • 4 tbsp Butter unsalted
  • 2 tbsp Onions for garnish (optional), fried

Sauté Onions

  • Melt 2 tablespoons of butter in a large pan or kadhai over medium heat. Add the sliced onions and cook until softened and translucent, about 8-10 minutes, stirring occasionally.

Make Roux

  • Sprinkle in the all-purpose flour and cook, stirring constantly, for 1-2 minutes until lightly golden and there are no lumps. Remove from heat and let the mixture cool slightly.

Prepare Onion Paste

  • While the roux cools, blend the cooked onions into a smooth paste using a blender or food processor. Set aside.

Sauté Spring Onions and Season

  • In the same pan, melt the remaining 2 tablespoons of butter. Add the chopped white parts of the spring onions and sauté for about a minute until fragrant.

Add Spices and Stock

  • Stir in the salt and black pepper. Add the chicken stock and bring to a simmer.

Incorporate Onion Paste

  • Add the onion paste to the simmering stock and stir well to combine. Cook for 5-7 minutes, or until the sauce has thickened to your desired consistency.

Finish with Cream

  • Stir in the heavy cream and cook for another 1-2 minutes, just until heated through. Do not boil.

Serve

  • Remove from heat and pour into bowls. Garnish with fried onions and the green parts of the spring onions (optional). Serve hot and enjoy!
