Ingredients
Aromatics & Vegetables
- 2 Onion large, thinly sliced
- 1 Spring Onion finely chopped, white part only
Dairy & Stock
- 1 cup Heavy Cream fresh, or substitute with crème fraîche
- 1 cup Chicken Stock low sodium preferred
Spices & Seasoning
- 1 tbsp All-Purpose Flour also known as maida
- 1.5 tsp Salt or to taste
- 1/3 tsp Pepper black, freshly ground, preferred
Instructions
Sauté Onions
- Melt 2 tablespoons of butter in a large pan or kadhai over medium heat. Add the sliced onions and cook until softened and translucent, about 8-10 minutes, stirring occasionally.
Make Roux
- Sprinkle in the all-purpose flour and cook, stirring constantly, for 1-2 minutes until lightly golden and there are no lumps. Remove from heat and let the mixture cool slightly.
Prepare Onion Paste
- While the roux cools, blend the cooked onions into a smooth paste using a blender or food processor. Set aside.
Sauté Spring Onions and Season
- In the same pan, melt the remaining 2 tablespoons of butter. Add the chopped white parts of the spring onions and sauté for about a minute until fragrant.
Add Spices and Stock
- Stir in the salt and black pepper. Add the chicken stock and bring to a simmer.
Incorporate Onion Paste
- Add the onion paste to the simmering stock and stir well to combine. Cook for 5-7 minutes, or until the sauce has thickened to your desired consistency.
Finish with Cream
- Stir in the heavy cream and cook for another 1-2 minutes, just until heated through. Do not boil.
Serve
