Ingredients
For the Roasted Dal
- 1/2 cup Mung Dal moong dal, split, yellow
For the Soup
- 1 1/2 cup Water
- 2 tbsp Ghee or refined oil, but ghee enhances flavor.
- 1/3 cup Coconut optional, adds sweetness and texture., shredded
- 1/2 tsp Jaggery optional, adjust to taste; can substitute with sugar.
- 1/2 tsp Turmeric Powder haldi
- 1 1/2 tsp Salt adjust to taste.
- 1-2 Chilies slit vertically; adjust quantity to taste., green
- 1 tsp Ginger grated or finely chopped.
- 1 tsp Cumin Seeds jeera, roast lightly before using for enhanced flavor, roasted
For Tempering
- 1/2 tsp Cumin Seeds jeera
- 1 pinch Asafoetida hing
- 2 Chilies dry, red
- 1 Bay Leaf tej patta
- 1 inch Cinnamon Stick
- 2 Cloves
- 2 Cardamom Pods elaichi
Instructions
Prepare the Dal
- Dry roast the yellow split mung dal in a pan over medium-low heat until lightly golden. Be careful not to burn it. Let cool for 5 minutes.
- Wash the roasted dal 2-3 times with water.
- Pressure cook the dal with 1 1/2 cups of water, a pinch of salt, and turmeric powder. Cook until 2 whistles, then let the pressure release naturally for 15 minutes.
Make the Tempering
- Heat ghee (or oil) in a pan. Add asafoetida, cumin seeds, dry red chilies, cinnamon stick, bay leaf, cloves, and cardamom pods. Sauté for 2-3 minutes over low heat until fragrant.
- Add grated ginger and green chilies. Sauté for 2 minutes until the raw smell of ginger disappears.
Combine and Simmer
- Add the cooked dal to the tempered spices. Add more water if needed to achieve your desired consistency. Bring to a gentle boil over medium-low heat.
- Stir in the roasted cumin powder and salt (if needed). Reduce heat and simmer for 2-3 minutes.
- Just before removing from heat, stir in the jaggery (optional).
Garnish and Serve
- Garnish with shredded coconut. Serve hot with rice or roti (flatbread).
