Ingredients
For the Rye Bread
- 1 cup Whole Wheat Flour whole
- 1/4 cup Almond Flour
- 1/2 cup Oat Flour
- 1/4 cup Rye Flour
- 1/4 cup Seeds (plus extra for sprinkling), mixed
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Coarse Salt (or to taste)
- 1 Tbsp Honey
- 1 cup Buttermilk (or 1 cup milk + 1 tbsp water + 1 tbsp yogurt)
For the Honey-Glazed Tofu
- 100 gm Tofu
- 2 Tbsp Runny Honey
- 1/2 tsp Fennel Seeds (coarsely crushed)
- 1 tsp Rosemary (crushed)
- 1 1/2 tsp Salt (or to taste)
- 1/4 tsp Pepper (or to taste), black
Instructions
- Preheat oven to 350°F (175°C). In a large bowl, whisk together the whole wheat flour, almond flour, oat flour, rye flour, baking powder, baking soda, salt, and mixed seeds. This ensures even distribution of the dry ingredients.
- In a separate bowl, combine the buttermilk and honey. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, as this can result in a tough bread. The dough should be slightly sticky.
- Line a baking sheet with parchment paper. Transfer the dough to the prepared baking sheet and spread it evenly. Sprinkle extra mixed seeds on top for added texture and flavor.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. This indicates that the bread is fully baked.
- Let the bread cool completely on a wire rack before slicing. Cooling prevents the bread from becoming soggy.
- Preheat oven to 400°F (200°C). Place the tofu on a baking sheet. Drizzle with honey and sprinkle with fennel seeds, rosemary, salt, and pepper.
- While the tofu is baking, prepare the garlic-rye toast. Melt the butter and mix it with the crushed garlic.
- Brush the garlic butter onto the rye bread slices. Place the bread slices on the baking sheet alongside the tofu. Bake for 4-5 minutes, or until the toast is golden brown and the tofu is heated through.
- Place the honey-glazed tofu on top of the garlic-rye toast. Serve immediately and enjoy this delicious and nutritious breakfast, lunch, or dinner.
Recipe Notes
Good To Know
- Do not leave the tofu in the oven for too long, or it will become tough.
- For an even chewier texture, press the tofu for at least 30 minutes before marinating.
- For extra complexity, add lemon zest or a balsamic glaze just before serving.
- For a vegan version, replace honey with maple syrup or agave nectar and use vegan bread.
- To make ahead, bake the tofu and toast the bread in advance, then store separately. Reheat the tofu before serving.
Expert Tips
- Ensure your oven is properly preheated for optimal crispiness.
- Don't overcrowd the baking sheet; give the tofu space to brown evenly.
- If using fresh herbs, add them towards the end of the marinating time to preserve their vibrant flavor.
Storage Instructions
- Store leftover baked tofu and bread separately in airtight containers at room temperature for up to 2 days, or in the refrigerator for up to 4 days.
