Ingredients
For the Custard
- 1 cup Sugar granulated
- 1 tbsp Corn Flour
- 1.5 tsp Salt or to taste
- 2 Egg Yolks
- 1 Egg
- 2 cup Milk whole milk recommended for richer flavor
- 1 tsp Vanilla Extract
For the Fruit & Biscuit Layer
- 1 cup Grapes halved or quartered, depending on size
- 1 medium Apple peeled, and diced, cored
- 1 cup Strawberries sliced
- 6 Digestive Biscuits crushed
Instructions
Prepare the Custard
- Whisk together the egg, egg yolks, sugar, and salt until pale and creamy. Stir in the vanilla extract.
- Heat the milk in a saucepan over medium heat until it's just about to simmer. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
- Return the mixture to the saucepan. Whisk in the cornflour (mixed with a little cold milk to form a slurry) until the custard thickens. Remove from heat.
- Pour the custard into a bowl and whisk over an ice bath to stop further cooking and prevent curdling.
Assemble the Pudding
- Crush the digestive biscuits.
- Divide the crushed biscuits among serving glasses or dishes.
- Gently fold the chopped fruits into the chilled custard.
- Pour the fruit custard over the biscuit layer in the glasses.
- Refrigerate for at least 2 hours to allow the flavors to meld and the pudding to set completely.
- Serve chilled and enjoy!
