Ingredients
For the Custard Base
- 2 cup Milk whole milk recommended
- 2 tbsp Corn Flour cornstarch
- 200 gm Sweetened Milk also known as milkmaid, condensed
For the Ice Cream
- 1 cup Heavy Cream
- 2 tsp Vanilla Extract
For Garnish
- 1 tbsp Tutti Frutti red and green candied fruit
- 3 Cherries fresh or maraschino cherries
- 2 tbsp Chocolate Syrup
- 2 tbsp Honey
Instructions
Prepare the Figs
- Soak the figs in 0.5 cups of water for at least 30 minutes to soften.
Make the Custard Base
- In a saucepan, whisk together 2 tbsp of cornflour with a small amount of the milk until smooth.
- Gradually whisk in the remaining milk and bring to a simmer over medium heat, stirring constantly until the mixture thickens.
- Remove from heat and stir in the sweetened condensed milk.
Combine and Cook Figs
- Once the figs are soft, drain them and mash them with a fork or potato masher.
- Stir the mashed figs into the warm custard base.
Incorporate Cream and Flavorings
- Stir in the heavy cream and vanilla extract.
Freeze and Blend
- Pour the mixture into a freezer-safe container and freeze for 1 hour.
- Remove from the freezer and blend the mixture until smooth and fluffy using an immersion blender or in a food processor.
- Return the mixture to the freezer for another 4-5 hours, or until solid.
Garnish and Serve
- Scoop the ice cream into bowls or cones.
- Garnish with honey, chocolate syrup, tutti frutti, and cherries.
