For the Spaghetti

For the Creamy Egg Sauce

  • 8 Eggs hard-boiled, large
  • 200 ml Heavy Cream
  • 60 ml Milk whole milk preferred
  • 1 Onion chopped, medium
  • 2 Chilies adjust to taste, finely chopped, green
  • 1.5 tsp Salt to taste
  • 0.5 tsp Pepper black, freshly ground
  • 1 tbsp Butter unsalted

Prepare the Hard-Boiled Eggs

  • Bring a pot of water to a boil. Gently add the eggs and cook for 8-10 minutes for a firm yolk. Immediately transfer to an ice bath to stop cooking. Peel and coarsely chop the eggs.

Cook the Spaghetti

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain, reserving about ½ cup of pasta water.

Sauté the Onions and Chilies
