Ingredients
For the Beef
- 1 lb Sirloin Steak about 500g
- 2 tbsp Paprika sweet
- 1 tsp Pepper black
- 1-2 tsp Salt or to taste
For the Sauce
- 1 Onion red, sliced
- 150 gm Mushrooms sliced
- 2 tbsp Olive Oil
- 20 gm Butter
- 1/3 cup Brandy
- 1/2 cup Beef Broth
- 1/2 cup Cream Or Plain Yogurt sour
For Serving
- 1 tbsp Parsley chopped, fresh
- 1 cup Basmati Rice Or Egg Noodles cooked
Instructions
- Place the sirloin steak in the freezer for 15 minutes to firm up for easier slicing.
- Slice the steak against the grain into thin strips.
- Season the beef strips generously with paprika, salt, and pepper, ensuring they are evenly coated.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beef strips to the hot skillet and sear for 3-4 minutes until nicely browned.
- Remove the beef from the skillet and set aside.
- Melt the butter in the same skillet.
- Add the sliced onions and mushrooms to the skillet and sauté until softened and lightly browned.
- Carefully pour the brandy into the skillet and swirl to deglaze, scraping up any browned bits from the bottom. This adds depth of flavor.
- Pour in the beef broth and simmer for 5-7 minutes, or until the sauce has reduced by half.
- Return the seared beef to the skillet and stir to combine with the sauce.
- Remove the skillet from the heat and stir in the sour cream or yogurt until smooth and creamy. The residual heat will gently warm the sour cream preventing it from curdling.
- Garnish with fresh parsley and serve hot over cooked rice or egg noodles.
