- Finely chop the onions and carrots. Chop the chicken into medium pieces. Finely chop the cilantro, discarding the roots.
- If using brown rice, rinse it under cold water until the water runs clear. This helps remove excess starch and ensures fluffy rice.
- In a pressure cooker, heat the olive oil and butter over medium heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes. Add the grated carrots and cook for another 3-5 minutes, until slightly softened.
- Add the bay leaf and cloves to the pot. Next, add the chicken and season with salt and pepper. Sauté until the chicken is lightly browned on all sides.
- Pour in the white wine and let it reduce slightly, about 1-2 minutes. This adds depth and complexity to the dish. Then, pour in the chicken stock and bring to a boil.
- Add the rinsed rice and the whole head of garlic to the pot. Check for seasoning and adjust salt if needed. Sprinkle in half of the chopped cilantro.
- Close the lid of the pressure cooker and cook according to the manufacturer's instructions for your specific type of rice. Once the pressure has released naturally, open the lid and remove the head of garlic.
- Stir in the remaining chopped cilantro and grated Parmesan cheese. Serve hot and enjoy!
