  • Whisk the yogurt until smooth. Add the finely chopped onion, tomato, cucumber, green chili, and cilantro. Stir in the red chili powder, chaat masala, homemade masala powder, and salt. Mix well and set aside.

Assemble the Sandwiches

  • Trim the crusts from the bread slices (optional). Spread about 2 tablespoons of raita evenly onto one slice of bread. Top with another bread slice to form a sandwich. Repeat with remaining bread and raita.

Toast the Sandwiches

  • Heat 1 tablespoon of oil in a non-stick pan or griddle over medium heat. Add the mustard seeds and curry leaves. Once the mustard seeds begin to sputter, carefully place the sandwiches in the pan.

Cook the Sandwiches
