Ingredients
For the Raita Filling:
- 200 gm Yogurt or curd
- 1 Onion finely chopped
- 1/2 Tomato finely chopped
- 1/3 Cucumber finely chopped
- 1 Chili finely chopped, green
- 1/4 cup Coriander finely chopped
- 1/3 tsp Chili Powder red
- 1/3 tsp Chaat Masala
- 1/2 tsp Homemade Masala Powder 1 tsp cumin seeds, 1/2 tsp black peppercorns, roast and grind 1 tbsp coriander seeds, and 1-2 dry red chilies.
- 1.5 tsp Salt or to taste
For Toasting the Sandwich:
- 6 slices Bread white or brown bread
- 1 tbsp Cooking Oil
- 1 tsp Mustard Seeds rai
- 10 leaves Curry Leaves
Instructions
Prepare the Raita Filling
- Whisk the yogurt until smooth. Add the finely chopped onion, tomato, cucumber, green chili, and cilantro. Stir in the red chili powder, chaat masala, homemade masala powder, and salt. Mix well and set aside.
Assemble the Sandwiches
- Trim the crusts from the bread slices (optional). Spread about 2 tablespoons of raita evenly onto one slice of bread. Top with another bread slice to form a sandwich. Repeat with remaining bread and raita.
Toast the Sandwiches
- Heat 1 tablespoon of oil in a non-stick pan or griddle over medium heat. Add the mustard seeds and curry leaves. Once the mustard seeds begin to sputter, carefully place the sandwiches in the pan.
Cook the Sandwiches
- Toast the sandwiches for 2-3 minutes per side, or until golden brown and heated through. Press down gently with a spatula to ensure even cooking.
Serve
- Remove the sandwiches from the pan. Cut each sandwich diagonally in half. Serve immediately with tomato ketchup or green chutney, if desired.
