Ingredients
Chicken & Veggies
- 100 gm Chicken Breast shredded or diced, cooked
- 1 Onion medium, finely chopped
- 1 Carrot medium, finely chopped
- 1/2 Cucumber finely chopped
Dressing & Seasoning
- 3 tbsp Mayonnaise
- 1 tsp Pepper freshly ground, black, or to taste
- 1.5 tsp Salt or to taste
Fresh Herbs & Greens
Optional additions
- 2 tsp Olive Oil optional, for extra richness
Instructions
Prepare the Ingredients
- Finely chop the onion, carrot, and cucumber. Shred or chop the lettuce. Finely chop the coriander.
Cook the Chicken (if using raw chicken)
- If using raw chicken breast, bring a pot of water to a boil. Add the chicken and cook for about 3 minutes, or until cooked through. Drain the water and let the chicken cool before shredding or dicing it.
Combine the Salad
- In a large bowl, combine the cooked chicken, onion, carrot, cucumber, mayonnaise, salt, and pepper. Gently mix until well combined.
Add Fresh Herbs & Greens
- Stir in the chopped coriander and lettuce.
Chill & Serve
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend. Serve chilled. You can serve it in lettuce cups, on bread as a sandwich filling, or simply in a bowl.
