  • Add the sliced potatoes and chicken (or salami) to the pan. Roast for about a minute on each side, until lightly browned and heated through.
  • Sprinkle paprika and salt over the potatoes and chicken/salami as they roast. This adds flavor and enhances the aroma.
  • If your idlis are cold, warm them briefly in the microwave for about 30 seconds to soften them. This will prevent them from cracking when sliced.
  • Carefully slice each idli horizontally through the center to create two equal halves.
  • Spread cheese spread evenly on both cut sides of each idli half. Alternatively, you can use mint or coconut chutney for a different flavor profile.

Recipe Notes

Good To Know

  • You can use mint chutney instead of cheese spread.
  • For extra flavor, sprinkle a pinch of chaat masala or black salt between the vegetable layers before assembling the sandwich.
  • If packing for a lunchbox, allow the idlis to cool completely before assembling to prevent sogginess; wrap them in parchment paper.
  • For a vegan version, replace the cheese spread and cheese with hummus or cashew cream, and add avocado slices.
  • For a crispy exterior, lightly pan-toast the assembled sandwiches with ghee or oil until golden.

Expert Tips

  • Cut the idlis into uniform shapes for even cooking and a neat presentation.
  • Get creative with fillings! Try different chutneys, roasted vegetables, or spiced potatoes.
  • Serve these sandwiches with a side of sambar or coconut chutney for a complete meal.

Storage Instructions

  • Store leftover sandwiches in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan or microwave before serving.
