Instructions

Prepare the Broccoli

  • Bring 2 cups of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Immediately transfer the broccoli to a bowl of ice water to stop the cooking process and preserve the vibrant color.

Make the Cheese Sauce

  • In a large bowl, combine the grated processed cheese, cheddar cheese, hung curd (or Greek yogurt), fresh cream, white pepper powder, mace powder, ginger paste, garlic paste, green chili paste, and salt. Whisk until smooth and creamy.

Marinate and Bake

  • Add the blanched broccoli to the cheese sauce and gently toss to coat evenly. Marinate for at least 2 hours in the refrigerator (or longer for a more intense flavor).
  • Preheat oven to 350°F (180°C). Spread the marinated broccoli in a greased baking dish.
  • Bake for 12-15 minutes, or until the cheese is melted, bubbly, and slightly golden brown.

Serve

  • Serve the creamy baked broccoli hot, optionally garnished with mint chutney.
