Ingredients
For the Rabdi
- 3 slices Bread crusts removed, white
- 500 ml Milk
- 1 can (14 oz) Sweetened Milk condensed
- 1/4 cup Sugar adjust to taste
- 1/4 cup Heavy Cream fresh
- 1/4 cup Fruit chopped apricots, cranberries, dried, mixed, such as raisins
- 1 tsp Cardamom Powder or to taste
Instructions
Prepare the Bread
- Crumble the bread slices into a food processor and pulse until you have fine breadcrumbs. Set aside.
Cook the Rabdi
- Heat the milk in a medium saucepan over medium heat. Once simmering, add the bread crumbs and stir continuously to prevent sticking.
Add Sweeteners and Flavorings
- Add the sweetened condensed milk and sugar. Stir well until the sugar dissolves and the mixture starts to thicken slightly.
Incorporate Cream and Fruits
- Reduce the heat to low. Gently stir in the heavy cream and dried fruits. Continue to cook, stirring occasionally, until the Rabdi reaches your desired consistency (about 5-7 minutes). Do not boil.
Finish and Chill
- Remove from heat and stir in the cardamom powder. Pour into a serving bowl and refrigerate for at least 2 hours to allow the flavors to meld and the Rabdi to chill completely.
Garnish and Serve
- Garnish with extra dried fruits or a sprinkle of chopped nuts before serving. Enjoy cold!
