Ingredients
 

Dairy & Grains

  • 500 ml Milk whole milk recommended for creaminess
  • 1/2 cup Short-Grain Rice arborio or sushi rice work best. rinse thoroughly before using.

Fruits & Sweeteners

  • 1 cup Blueberries fresh blueberries are preferred but canned blueberries can be used as well.
  • 1/2 cup Blueberries canned blueberries, drained.
  • 1/2 cup Sugar granulated sugar, adjust to your sweetness preference.

Garnish

  • 1/4 cup Almonds slivered or sliced, toasted for enhanced flavor.
  • 1/4 cup Pistachios shelled and roughly chopped.
  • 1 tsp Vanilla Extract optional, enhances the flavor

Instructions
 

Preparing the Rice

  • Rinse the rice thoroughly under cold water.
  • Combine milk, rice, and sugar in a saucepan. Bring to a boil over medium heat, then reduce heat to low, and simmer for about 20-25 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally to prevent sticking.
  • Stir in the vanilla extract (if using).

Adding Blueberries & Chilling

  • Remove from heat and let the mixture cool slightly. Gently stir in the fresh and canned blueberries.
  • Transfer the pudding to a serving bowl or individual ramekins.
  • Cover and refrigerate for at least 2-3 hours, or preferably overnight, to allow the flavors to meld and the pudding to chill thoroughly.

Serving the Pudding

  • Before serving, garnish with toasted almonds and chopped pistachios. Serve chilled and enjoy!
