Ingredients
 

For the Filling

  • 1 Potato Medium, boiled and mashed
  • 1 tbsp Onion Finely chopped, optional - see Quick Swap
  • 1 tbsp Coriander Leaves Chopped
  • 1 Green Chilli Small piece, finely chopped, optional - see Spice Note
  • 1 pinch Chaat Masala Or roasted cumin powder, optional
  • 1 pinch Salt Or as required
  • 1/2 teaspoon Butter For spreading, optional

For the Sandwich

  • 2 Bread Whole wheat slices

For Serving

  • 1/2 Apple Sliced, or half an orange, segmented

Instructions
 

Preparing the Filling

  • Mix the mashed potato with onion, coriander leaves, green chilli, chaat masala and salt in a bowl.

Assembling the Sandwich

  • Lightly butter one side of each bread slice, if using. Spread the potato filling evenly on one slice and top with the second slice.
  • Press the slices together gently. Toast on a tawa or in a sandwich press until golden, if desired.

Packing

  • Cut the sandwich into halves or fun shapes. Pack with apple or orange on the side.

Tiffin Pairing

Apple or orange adds natural sweetness and a refreshing bite alongside the spiced potato filling.

Make-Ahead Tip

Boil and mash the potato the night before and refrigerate the mixed filling in a covered container.

Quick Swap

Leave out the onion for a simpler filling. A little ketchup or mint chutney spread inside adds extra flavour if your child prefers that to butter.

Allergen Note

Contains wheat/gluten (bread). Butter is a dairy product if used - leave it out for a dairy-free version.

Spice Note

Green chilli is optional - the potato filling is mild and tasty even without it.

Packing Tip

Wrapping the sandwich in parchment paper helps keep it fresh and prevents it from drying out by lunchtime.
