Instructions

Assembling the Sandwich

  • Lightly butter one side of each bread slice, if using.
  • Layer the cheese, tomato, cucumber and capsicum between the slices. Sprinkle a pinch of salt and pepper if using.
  • Press the slices together gently. If desired, toast on a tawa or in a sandwich press until the cheese softens slightly and the bread turns golden.

Packing

  • Cut the sandwich into halves or fun shapes using a cookie cutter. Wrap in parchment paper and pack with extra cucumber slices and grapes on the side.

Recipe Notes

Tiffin Pairing

Extra cucumber slices and grapes add crunch and natural sweetness alongside the soft sandwich.

Quick Swap

Swap the cheese slice for grated processed cheese or a mild paneer slice if that's what you have on hand. Any available vegetable, like grated carrot, works instead of capsicum.

Allergen Note

Contains dairy (cheese, butter) and wheat/gluten (bread). Check the label on packaged bread and cheese for any additional allergens.

Packing Tip

Wrapping the sandwich in parchment paper before placing it in the tiffin box helps keep it from turning soggy from the vegetable moisture.
