About Coconut Rice for Kids Tiffin
Lightly sweet, mildly spiced rice tossed with fresh coconut and a simple South Indian-style tempering - a good change of pace from the tangier lemon and tomato rice earlier in the plan.Cucumber and fruit on the side round out the meal with crunch and freshness.

Ingredients
For the Coconut Rice
- 3/4 cup Cooked Rice Cooled - leftover rice works best
- 2 tbsp Grated Coconut Fresh or frozen - see Allergen Note
- 1/4 teaspoon Mustard Seeds
- 1/2 teaspoon Chana Dal Optional, adds crunch
- 1/2 teaspoon Urad Dal Optional, adds crunch
- 4 Curry Leaves Optional
- 1 Green Chilli Finely chopped, optional - see Spice Note
- 1 teaspoon Peanuts Optional - see Allergen Note
- 1 pinch Salt Or as required
- 1 teaspoon Oil
- 1 teaspoon Coriander Leaves Chopped, for garnish
Instructions
Preparing the Rice
- This recipe uses cooled, cooked rice. If you don't have leftover rice, cook a scant 1/4 cup raw rice with water until just done, then spread it on a plate to cool completely.
Making the Tempering
- Heat oil in a pan on medium heat. Add mustard seeds, chana dal and urad dal, and cook until golden. Add curry leaves, green chilli and peanuts if using, and cook for a minute more.
Finishing
- Add the grated coconut and cook for 1 to 2 minutes, stirring, until lightly warmed through. Add the cooled rice and salt, and toss gently to combine and heat through. Mix in coriander leaves.
Packing
- Let the rice cool slightly and pack it in the tiffin box with cucumber slices and fruit on the side.
