Preparing the Rice

  • This recipe uses cooled, cooked rice. If you don't have leftover rice, cook a scant 1/4 cup raw rice with water until just done, then spread it on a plate to cool completely before using.

Making the Tempering

  • Heat oil in a pan on medium heat. Add mustard seeds, chana dal and urad dal, and cook until the dals turn light golden. Add curry leaves and green chilli if using.
  • Add peanuts if using and cook for a minute, then add turmeric powder.

Finishing

  • Add the cooled rice and salt, and toss gently to combine and heat through. Turn off the heat and mix in lemon juice and coriander leaves. Taste and adjust lemon or salt as needed.

Packing

  • Let the rice cool slightly, then pack it in the tiffin box with cucumber slices and orange segments on the side.

Cucumber and orange add freshness and a boost of vitamin C alongside the tangy rice.

Make-Ahead Tip

Cook extra rice the previous day and refrigerate it - day-old, cold rice actually works better for this dish since the grains hold their shape and don't turn mushy.

Quick Swap

Swap peanuts for roasted chana for a nut-free version. Adjust the amount of lemon juice up or down based on how tangy your child likes it.

Allergen Note

Contains peanuts if used - leave them out for nut allergies.

Spice Note

Green chilli is optional. Leave it out entirely or use just a small piece for a milder version.

Packing Tip

Let the rice cool slightly before packing to prevent condensation from building up inside the tiffin box.
