Preparing the Rice

  • This recipe uses cooled, cooked rice. If you don't have leftover rice, cook a scant 1/4 cup raw rice with water until just done, then spread it on a plate to cool completely.

Making the Tomato Base

  • Heat oil in a pan on medium heat. Add mustard seeds, chana dal and urad dal, and cook until golden. Add curry leaves and green chilli if using.
  • Add onion if using and saute until soft. Add the chopped tomato and cook until it softens and turns pulpy, 4 to 5 minutes.

Finishing

  • Add turmeric powder, red chilli powder and salt, and mix well. Add the cooled rice and toss gently to combine and heat through. Mix in coriander leaves.

Packing

  • Let the rice cool slightly and pack it in the tiffin box with cucumber slices and fruit on the side.

Make-Ahead Tip

Cook extra rice a day ahead and refrigerate it - cold rice holds its shape better in this dish than freshly cooked rice.

Quick Swap

Leave out the onion for a simpler version. A ripe, soft tomato gives a naturally sweeter tomato base.

Spice Note

Green chilli and red chilli powder are both optional - adjust to your child's taste or leave them out entirely.

Packing Tip
