Ingredients
 

  • 200 gm biscuits plain sweet, like tea biscuits or Maria cookies
  • 100 gm butter unsalted, softened
  • 3 tbsp sugar granulated
  • 2 tbsp cocoa powder unsweetened
  • 3 tbsp milk
  • 1/2 cup walnuts lightly toasted and roughly chopped

Prepare your biscuits

  • Crush half of them into a fine crumb using a rolling pin or food processor. Break the other half by hand into larger, pea-sized pieces.
  • Combine the fine crumbs, larger biscuit pieces, and chopped walnuts in a large mixing bowl.
  • In a small saucepan, whisk together the sugar, cocoa powder, and milk until smooth.
  • Place the saucepan over low heat and bring the mixture to a gentle simmer, stirring occasionally.
  • Remove from the heat and add the softened butter. Stir until the butter is completely melted and the mixture is glossy and smooth.
  • Pour the warm chocolate mixture over the biscuits and walnuts. Mix with a spatula until everything is well-coated.
  • Lay out a large piece of plastic wrap on your counter. Spoon the mixture onto it in a line.
  • Shape the mixture into a tight log, about 2 inches (5cm) in diameter. Roll it tightly in the plastic wrap, twisting the ends to seal and compact the log.
  • Place the log in the freezer for at least 3 hours, or until it is completely firm.
  • Before serving, let it sit at room temperature for a few minutes to make slicing easier. Unwrap and cut into 1/2-inch (1.5cm) thick rounds.

  • The total time for this recipe includes a minimum of 3 hours for chilling in the freezer.
  • For an even more authentic look, lightly dust the log with powdered sugar before slicing to mimic the look of a real salami.
  • Feel free to customize by adding other nuts like pistachios, or a handful of dried cherries for extra flavor and texture.
