Instructions
 

Sauté Aromatics

  • Heat olive oil and butter in a large pot over medium heat. Add the bay leaf and crushed peppercorns. Add the chopped onion and sauté until translucent, about 5 minutes.

Add Vegetables

  • Add the minced garlic, chopped carrots, and celery. Stir-fry for another 2-3 minutes until slightly softened.

Simmer Tomatoes

  • Add the chopped tomatoes, stir well, and add 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes, or until the tomatoes are softened.

Blend the Soup

  • Carefully remove the bay leaf. Use an immersion blender to puree the soup directly in the pot until completely smooth, or carefully transfer the soup in batches to a regular blender and blend until smooth. For a smoother texture, strain the soup through a fine-mesh sieve.

Season and Serve

  • Return the pureed soup to the pot (if using a regular blender). Stir in salt to taste. Heat through gently. Garnish with fresh cream, croutons, and fresh coriander before serving.
