Ingredients
- 3 Tomatoes chopped, medium-sized
- 1.5 cup Vegetables and purple cabbage, beetroot, bottle gourd (also known as dhudhi), green cabbage, green onions, mixed, roughly diced carrots, spinach leaves
- 3 clove Garlic minced
- 4.5 leaves Basil chopped, fresh
- 1/2 tbsp Butter
- 1 tsp Cumin Seeds also known as jeera
- 1/4 tsp Pepper black, crushed
- 1/2 tbsp Sugar
- 1 cup Water or vegetable broth for richer flavor
- Salt to taste
Garnishing
- 1 tbsp Cream for garnish, fresh, optional
Instructions
Prepare the Vegetables
- Pressure cook the chopped tomatoes, minced garlic, and diced mixed vegetables until tender. Allow to cool slightly.
Blend and Strain
- Carefully blend the cooked vegetables until smooth. Strain the puree through a fine-mesh sieve to remove any fibers for a smoother soup.
Sauté Aromatics
- Heat the butter in a saucepan over medium heat. Add the cumin seeds and sauté for about 30 seconds, or until fragrant.
Simmer the Soup
- Stir in the sugar, salt, and crushed black pepper. Add the strained vegetable puree and water (or broth). Bring to a simmer and cook for 10-15 minutes to allow the flavors to meld.
