Ingredients
For the Kulfi Base
- 3 tbsp Rolled Oats
- 1 cup Milk
- 1/2 cup Mango Puree fresh or frozen
- 1/4 cup Sugar or to taste; adjust based on mango sweetness
- 1/2 tsp Cardamom Powder freshly ground is best
For Garnishing
- 1/4 cup Almonds optional, slivered, toasted
- 2 tbsp Pistachios chopped, optional
Instructions
Prepare the Oats
- Grind rolled oats into a fine powder using a blender or spice grinder.
Cook the Kulfi Base
- In a medium saucepan, combine the powdered oats, milk, and cardamom powder. Stir well.
- Cook over medium heat, stirring frequently, until the mixture thickens slightly. This takes approximately 10-15 minutes.
- Stir in the mango puree and sugar; continue cooking for another 2-3 minutes, or until the sugar dissolves completely.
- Remove from heat and let the mixture cool completely.
Freeze the Kulfi
- Pour the cooled mixture into kulfi molds or small ramekins.
- Freeze for at least 6-7 hours, or until solid.
Garnish and Serve
- Remove the kulfi from the freezer 10-15 minutes before serving to allow it to soften slightly.
- Garnish with toasted slivered almonds and pistachios. Serve chilled.
