Prepare the Paneer

  • Bring the milk to a boil in a heavy-bottomed saucepan over medium heat.
  • Reduce the heat to low and simmer for a few minutes.
  • In a separate bowl, mix lemon juice with 1/4 cup of water.
  • Slowly add the lemon juice mixture to the warm milk, stirring gently. The milk will curdle.
  • Once the whey separates from the solids, turn off the heat.
  • Line a colander with cheesecloth and pour the curdled milk into it.
  • Rinse the curds under cold water, squeezing out excess liquid.
  • Gently gather the cheesecloth and hang it for about 30 minutes to allow more whey to drain.

Make the Sandesh

  • Place the drained paneer in a non-stick pan over low heat.
  • Mash the paneer with a fork until smooth and crumbly.
  • Add powdered sugar and cardamom powder. Mix well.
  • If the mixture is too dry, add a tablespoon of water at a time to achieve a pliable consistency.
  • Continue to cook, stirring frequently, until the mixture is warm and cohesive. Do not overheat.
  • Remove from the heat and let it cool slightly.
  • Shape the mixture into desired forms (fish shapes are suggested).
  • Garnish with chopped nuts, if desired.
  • Let the Sandesh cool completely before serving.
