Ingredients

- 1 cup Strawberry fresh or frozen, hulled and sliced (reserve some for garnish)
- 2 large Peach diced (reserve some for garnish), fresh, ripe

Make the Caramel
- In a medium saucepan, cook sugar over medium heat until it melts and turns into a light amber caramel. Carefully pour in water (it will splatter!), whisking constantly to avoid burning.
Infuse the Wine
- Add white wine gradually, whisking until the caramel dissolves completely. Add the vanilla bean pod and seeds and star anise. Simmer gently for 5 minutes, allowing the spices to infuse.
Cook the Peaches
- Add the diced peaches to the saucepan, cover, and simmer for about 10-15 minutes, or until the peaches are tender but not mushy.
Add Strawberries & Simmer
- Stir in the strawberries, cover, and simmer for 15-20 minutes over low heat, until the strawberries are softened and the mixture is slightly thickened.
Blend and Chill
- Remove from heat and let cool slightly. Remove the vanilla bean pod and star anise. Blend the mixture until completely smooth using an immersion blender or regular blender.
Finish and Chill
- Stir in the champagne to reach your desired consistency. Taste and adjust sweetness if needed. Chill the soup thoroughly in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld and the soup to fully chill.
Garnish and Serve
- Before serving, garnish each chilled soup bowl with fresh sliced strawberries and peaches.
