Ingredients
For the Potato Crust
For the Filling
- 2 tbsp Potato mashed
- 2 tbsp Soya Granules soaked
- 1 tbsp Spinach chopped
- 2 tbsp Bell Peppers finely chopped, red
- 1.5 leaves Basil fresh
- 1 tbsp Italian Seasoning
- 1 tsp Chili Flakes
- 1/2 tsp Pepper black, or to taste
- 1/2 tsp Salt or to taste
- 1 tsp Olive Oil
- 1 tbsp Onion finely chopped
- 1 tsp Garlic minced
- 2 tbsp Pasta Sauce
For the Garnish
- 2 tbsp Spring Onions thinly sliced
- 1 small Bell Peppers julienned, red
Instructions
- Preheat oven to 350°F (175°C). Grease a baking tray with butter. Line it with parchment paper and brush with more butter. Sprinkle with some grated processed cheese.
- Arrange the thinly sliced potatoes on the prepared tray, overlapping slightly. Sprinkle with more cheese. Bake for 15 minutes to partially cook the potatoes.
- While the potatoes are par-baking, prepare the filling. Heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. This softens the onion and develops its sweetness.
- Add the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic, as it can become bitter.
- Add the soaked soya granules, mashed potato, chopped spinach, and finely chopped red bell pepper to the pan. Cook for 1-2 minutes, stirring occasionally, until heated through.
- Stir in the fresh basil, Italian seasoning, chili flakes, salt, and pepper. Mix well to combine all the flavors.
- Remove the pan from the heat and stir in the remaining grated processed cheese. Allow the filling to cool slightly.
- Spread the cooled filling evenly over the par-baked potato slices on the baking tray.
- Carefully roll up the potato slices, starting from one of the long edges. Place the rolls seam-down on the baking tray.
- Increase the oven temperature to 400°F (200°C). Bake for another 15 minutes, or until the potato rolls are golden brown and crispy.
- Garnish with sliced spring onions and julienned red bell pepper. Serve hot and enjoy!
