Recipe Notes

This is a soggy cookie and not a crunchy one since no flour is added.
Tastes better the next day.

Additional Tips

  • For extra crunch and flavor, lightly toast the almonds and oats in a dry skillet before mixing them into the dough.
  • If your bananas are underripe, roast them in their skins at 350°F (175°C) for 10-15 minutes to deepen their sweetness and flavor.
  • To make these cookies school lunchbox-friendly, swap the almonds for pumpkin or sunflower seeds to create a nut-free version.
  • Shape the dough into fun, kid-friendly forms or use cookie cutters; the dough holds its shape well and makes snack time more engaging for children.
