Ingredients
 

For the Chilla Batter

  • 1/4 cup Besan Gram flour
  • 1/3 cup Water Approximately, to make a smooth thin batter
  • 1 tbsp Onion Finely chopped, optional - see Quick Swap
  • 1 tbsp Tomato Finely chopped, optional
  • 1 tbsp Coriander Leaves Finely chopped
  • 1 Green Chilli Finely chopped, optional - see Spice Note
  • 1 pinch Turmeric Powder
  • 1 pinch Carom Seeds Ajwain, optional
  • 1 pinch Salt Or as required
  • 1 teaspoon Oil For cooking

Instructions
 

Preparing the Batter

  • Whisk besan with water until smooth and lump-free, similar to a thin pancake batter. Add onion, tomato, coriander leaves, green chilli, turmeric, carom seeds and salt, and mix well.

Making the Chillas

  • Heat a tawa on medium heat and grease lightly with oil. Pour a ladleful of batter and spread into a thin circle.
  • Cook until the base turns golden, then flip and cook the other side. Repeat to make a second chilla.

Preparing the Chutney

  • Grind mint leaves, coriander leaves, green chilli, lemon juice, salt and water into a smooth chutney.

Rolling and Packing

  • Spread a little chutney on each chilla, roll tightly into a log, and slice into pinwheels if desired. Pack the rolls with any remaining chutney in a separate small container.

Tiffin Pairing

The mint-coriander chutney rolled inside gives a fresh, tangy contrast to the savoury chilla.

Make-Ahead Tip

The chutney can be made the evening before and refrigerated in an airtight container. The batter can also be mixed a few hours ahead.

Quick Swap

Leave out the onion and tomato for a plain chilla if preferred - it still tastes good with just the spices and coriander.

Allergen Note

Besan is gram flour and generally gluten-free, but check for cross-contamination on the packaging if you need a strict gluten-free product.

Spice Note

Green chilli appears in both the chilla batter and the chutney - use it in just one place, or leave it out of both, for a milder version.

Packing Tip

Rolling the chilla with the chutney already spread inside keeps the tiffin box tidy instead of packing chutney separately.
