Ingredients
 

For the Moong Dal Batter:

  • 1 cup Mung Bean split yellow lentils, soaked in water for at least 3-4 hours, yellow
  • 1 cup Water add more if needed for desired consistency, for blending
  • 2 tbsp Rice Flour
  • 1 tbsp Ginger finely chopped
  • 2-3 Chilies adjust to taste, finely chopped, green
  • 1.5 tsp Salt or to taste

For the Filling:

  • 1/2 cup Chutney green, homemade or store-bought
  • 2 tbsp Oil for cooking

Instructions
 

Prepare the Moong Dal Batter

  • Soak the moong dal in enough water for 3-4 hours. Drain the water and blend the soaked dal with ginger, green chilies, and salt until smooth.
  • Transfer the batter to a bowl. Add the rice flour and mix well. Add a little water if the batter is too thick, aiming for a smooth, pourable consistency.

Prepare the Paneer Filling

  • In a separate bowl, combine the grated paneer, chopped bell pepper, green chilies, coriander leaves, red chili powder, garam masala, and salt. Mix thoroughly.

Cook the Chillas

  • Heat a non-stick pan or griddle over medium heat. Lightly grease the pan with oil.
  • Pour a ladleful of the moong dal batter onto the hot pan and spread it thinly into a small circle using the back of the ladle.
  • Cook for about 1-2 minutes per side, or until golden brown and cooked through. Flip carefully.

Assemble and Serve

  • Once cooked, remove the chilla from the pan. Spread a thin layer of green chutney on the chilla.
  • Add a spoonful of the paneer filling to one side of the chilla.
  • Gently roll up the chilla, tucking in the filling.
  • Cut the roll into smaller pieces and serve immediately with a cup of chai or coffee.
