Ingredients
For the Bitter Gourd Filling:
- 1 large Potato boiled and mashed
- 1/2 cup Peas fresh or frozen, green
- 1/2 tsp Chili Powder red
- 1/4 cup Mango Powder amchur, dry
- 2 tsp Anchari Masala bengali spice blend; can substitute with a mix of turmeric, and garam masala, coriander, cumin
- 1.5 tsp Salt or to taste
- 2 tbsp Vegetable Oil
For the Bitter Gourd and Coating:
- 2 medium Bitter Gourd karela, chopped lengthwise
- 1/4 cup Split Chickpea finely ground, roasted, split chickpeas
- 1/2 tsp Turmeric Powder for parboiling the bitter gourd
Instructions
Prepare the Bitter Gourd
- Halve the bitter gourds lengthwise, scoop out the seeds, and slice into 1-inch thick pieces. Parboil these pieces in salted water with a pinch of turmeric for about 5 minutes to reduce bitterness. Drain well and set aside.
Make the Filling
- Heat vegetable oil in a pan. Add the mashed potatoes, red chili powder, salt, amchur powder, and anchari masala. Sauté for 2-3 minutes until fragrant. Stir in the green peas and cook for another minute.
Assemble and Fry
- Fill each bitter gourd piece with the potato mixture. Sprinkle generously with the ground roasted chana dal.
Fry and Serve
- Heat a small amount of oil in a pan over medium heat and shallow fry the stuffed bitter gourd chops until golden brown and crispy on all sides. Serve hot.
